This is an easy recipe for refined-sugar free, chocolate chunk cookies. It came about as a result of my regular cookie-cravings and some experimenting in the kitchen!
Mix together the following dry ingredients in a bowl:
- 1/2 cup Brown Rice Flour
- 1/2 cup Wholemeal Spelt Flour
- 3tbsp raw cacao powder
- 2tbsp chia seeds
Then, in a saucepan over a medium heat, combine:
- 3tbsp coconut oil
- 3tbsp nut butter of choice
- 3tbsp maple syrup
Add the wet mixture from the saucepan to the dry ingredients, along with 1/4 cup of milk (dairy or dairy-free would work) and mix together to combine.
Finally, add about 1 cup of chopped chocolate! Refined-sugar free if possible (I used some sugar-free chocolate bits), otherwise, cacao nibs or regular dark chocolate with a high cocoa percentage are good substitutes.
Place spoonfuls of the mixture on a baking tray and flatten with the back of the spoon (Tip: work with a hot metal spoon if the mixture seems sticky!).
Bake for about 20mins at 180 degrees Celsius.
